projects: include sandbox data and project name

I just got very confused looking at my active workspace because:

- project.yaml has no sandbox metadata (the provisioner DOES send it btw)
- openfn.yaml does not list the project name, only the UUID, so it's kind hard to map it back to the app

Small stuff, this issue is just a reminder
